When fitting a new neck after doing a neckgraft or neck re-set, I usually plug the mortise with a solid piece of willow and then fit pieces of spruce along the edge. The missing purfling either side of the neck usually gets drawn on afterwards.
On this photo I replaced a piece of rib that wasn’t original to match it better.
